  2. The second one has tofu as base.

Ingredients:

  • Raw slivered almonds ½ cup
  • Chickpeas can be drained and rinsed 15 ounce
  • Celery ribs, diced small 2
  • Red grapes, halved ½ cup
  • Dried cherries ¼ cup
  • Cashew Vegan Mayo ½ cup
  • Lemon juice 1 tablespoon
  • Pepper and salt to taste

Instructions

Tips

  • Chop the vegetables with a large knife till small if there is no food processor available. Take a large bowl and with the help of a potato masher or fork mash the potatoes until flaky.

The rest of the ingredients are added. The process is a bit easy with the help of a food processor.

  • Omit the Almonds if you are allergic to them.
  • Vegan Cashew Mayo is best to use; however, store-bought vegan mayo can be used.

Possible substitution

Ingredients

  • Extra-firm tofu drained and processed 1lbs
  • Finely chopped celery 1 cup
  • Finely chopped red onion ½ cup
  • Silvered blanched chopped onions ¼ cup
  • Raisins ¼ cup
  • Vegan mayonnaise 6 tablespoons
  • Apple cider vinegar 2 tablespoons
  • Maple syrup 2 tablespoons
  • Olive oil 2 teaspoons
  • Ground pepper ½ teaspoons
  • Sea salt ½ teaspoons
  • Dill ¼ teaspoons
  • Turmeric a pinch
  • Fresh parsley chopped 2 tablespoons
  • Fresh dill chopped 2 tablespoons

Instructions

  1. Take a medium to a large-sized bowl and crumble tofu into small pieces.
  2. Mix tofu with onions, almond and celery.
  3. Take another bowl and mix dressing ingredients: maple syrup, mayonnaise, apple cider vinegar, pepper, olive oil, dill and turmeric.

Sprinkle dill and fresh parsley on top, and another stirring is given to mixing everything.

  1. The dressing is added to the mixture of tofu and well stirred to combine.
  • The salad lasts for 4-5 days in the fridge.

Tips

Using raw red onions in salads make it a bit intense, and this astringent flavour is removed by soaking the red onions in cold water before adding them.
